This cheesy garlic bread takes your basic garlic bread and turns it into the ultimate side dish. In fact, this might be one of the cheesiest dishes I’ve ever made. It’s been a HUGE hit with the family and they ask for it as much as they do my garlic knots, if not more.

The best part is that this recipe comes together in less than 20 minutes, so I can whip it up almost anytime. The ingredients are super simple too!

Why You’ll Love This Garlic Bread With Cheese

My family won’t stop asking me to make this cheesy garlic bread. Here’s why.

  • SO much cheese. There really should be an emphasis on “cheesy” in the title of the recipe. I used 4 (!!) different cheeses on this bread.
  • Fresh garlic > garlic powder. I will choose fresh minced garlic over garlic powder or garlic salt in almost everything but especially in this recipe. You just don’t get the same flavor otherwise!
  • Perfect with pasta or as an appetizer. You can stick with the classic garlic bread + pasta combo when serving this or serve it with some marinara for dipping as an appetizer on its own.

What You’ll Need

This easy side dish is made with just a handful of ingredients, including several different types of cheese! You can find the measurements in the printable recipe card below!

  • Bread – A loaf of French bread makes the perfect base for this cheesy garlic bread.
  • Butter – Softened so it’s easy to spread but not completely melted.
  • Garlic – You can’t have garlic bread without fresh garlic!
  • Salt
  • Cheese – This cheesy garlic bread is LOADED with cheese. I used freshly grated parmesan, a mozzarella and provolone shredded mixture, and a Colby jack and mozzarella cheese mixture.
  • Fresh parsley & dried oregano – Add earthy flavor that complement the garlic well.

How To Make Cheesy Garlic Bread

This cheesy garlic bread recipe comes together in just a few quick steps. Below is an overview and you can find printable instructions in the recipe card below.

  • Season the butter. Soften the butter in the microwave if needed. Stir the garlic, salt, and parmesan into the butter.
  • Butter the bread. Spread the garlic butter mixture evenly over the two halves of the bread. Top with a sprinkle of parsley and oregano.
  • Add the cheese. Divide the mozzarella/provolone blend between the two halves and then top with the Colby jack blend.
  • Bake. Bake for 10-12 minutes, until the cheese is melted and the edges have begun to brown.

Tips & Variations

Here are a few helpful hints and easy variations for making this recipe.

  • Use FRESH garlic. This recipe is not the time for garlic powder or garlic salt. I highly recommend mincing fresh cloves of garlic and not using the minced garlic in the jar too. You really want that garlic flavor to shine!
  • Can I use different bread? You can really use any time of bread you want but keep in mind you want bread that’s thick and sturdy so that it doesn’t fall apart under the cheese. Italian bread is a great option and ciabatta offers a different texture.
  • Use a blend of cheeses. As you can see on the ingredient list, I used several different types of cheese. While you don’t have to use this exact combo, I do recommend using several different cheeses. It really makes a difference in flavor!
  • Broil at the end. If you want the edges a bit more crisp, broil the bread for just 1-2 minutes at the end. Just keep a close eye on it so it doesn’t burn!
  • Wait to slice. You definitely want to enjoy this bread warm but wait a few minutes before slicing, to give the cheese some time to cool so it’s easier to serve.

Serving Suggestions

Truthfully, my family will eat this cheesy garlic bread anytime, with anything. Sometimes I just make up a batch as an appetizer and the whole family goes to town. It’s wonderful dipped in marinara sauce!

As a side, it’s perfect with all sorts of pasta dishes, like chicken spaghetti, spaghetti and meatballs, and lasagna. It great for soaking up every last bit of spaghetti meat sauce too and makes a great dipper for lasagna soup.

Proper Storage

Cheesy garlic bread is definitely best served warm. If needed, keep leftovers in an airtight container in the fridge for 1-2 days. Reheat in the oven to maintain some crispness.

Ingredients
  

  • 1 loaf French Bread sliced in half lengthwise.
  • 1.4 cup butter softened
  • 2 Teaspoons minced garlic
  • 1/2 teaspoon salt
  • 1/4 cup grated parmesan cheese
  • 4 ounces Mozzarella and Provolone shredded mixture
  • 4 ounces Colby Jack and Mozzarella shredded mixture.
  • Chopped fresh parsley.
  • Dried Oregano

Instructions

  • Preheat the oven to 400 degrees.
  • Take the ¼ cup (or half a stick) of butter and place it in a microwave-safe bowl.
  • Soften the butter.
  • To the butter, add the garlic, salt and parmesan cheese, stir to combine.
  • Using a butter knife of spatula, divide the mixture evenly between the two halves of bread and spread to cover the entire side of each bread half.
  • Sprinkle a pinch of fresh parsley and dried oregano over the bread.
  • Divide the mozzarella and provolone cheese between the two halves and spread evenly.
  • Divide the Colby Jack mixture and spread evenly on top of the mozzarella and provolone.
  • Line a baking sheet with foil or parchment and bake for 10-12 minutes or until the cheese is melted and the edges begin to brown.
